lunchtime update.

got out of the building at lunch and went to one of my favorite places across the street: barnes & noble. i got the latest issue of body fit magazine which came with an abs firming mini mag.

i had a piece of artichoke & spinach quiche and venti unsweetened green tea for lunch. it was AMAZING. i think that i could live off of quiche. found a recipe online. gonna try it out soon...

spinach artichoke quiche

2 garlic cloves, chopped
2 shallots, chopped
6 ounces fresh spinach
1 tablespoon butter
7 ounces canned artichoke hearts, chopped
1/4 cup pine nuts, toasted
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne
3 eggs
1 1/2 cups milk
3/4 cup asiago cheese, grated
1/4 cup parmigiano-reggiano cheese, grated
1 pie shell

1 preheat oven to 375°F.
2 sauté garlic and shallots in butter until softened, 1-2 minutes.
3 add spinach and sauté until wilted.
4 add chopped artichokes, pine nuts, seasonings and remove from heat.
5 pour into a large bowl to cool.
6 add eggs, milk and cheeses, stirring to mix everything well.
7 add to pie shell.
8 bake 45 minutes to 1 hour or until set.

i've come so far with self-improvement. i can't really understand why i struggle so much with the exercise component. i've had some good workouts in the pool. but i need to be at this more consistently. and weight training is critical right now. it's time to build up again. i hope this mag has some good ideas and tips. will share if i find them!

Oh, that sounds yummy. My Dad makes a smoked salmon quiche, it's delish. We used to eat it semi-often for dinner because it's pretty healthy and pretty cheap. :)

i sure do miss good salmon. the last time i was home i loaded up on some of the smoked stuff. gonna have to restock in august!

I do too. the flash-frozen stuff isn't bad, but no one smokes salmon like my Daddy, dang it! Have you ever had the smoked salmon or salmon dip over at my folks's place? Sooo yum.

No, but I'll bet it's fabulous. We'll have to converge on the Pacific Northwest in the future and have our feel of salmon!
